Olive tapenade tart with caramelized onions and ricotta cheese

When I first came across the recipe for this tart, I felt it was too good to be true. Something that reunited so many intense flavours: olive, caramelized onions, anchovies, lemon and ricotta cheese. All on top of buttery puff pastry.

The recipe has a relatively long list of ingredients, but many of them are pantry staples, so your actual grocery list should be much shorter. All the various ingredients come together to produce an incredible depth of flavour.

The recipe is straightforward and comes together pretty quickly. Just remember to thaw the puff pastry if you purchased it frozen (and try to source a good quality puff pastry – it makes a difference both in terms of flavour and flakiness).

I had originally intended this to be a light dinner. However, this is one intense tart, and can really only be eaten in small quantities. So save this recipe for an hors d’oeuvre at a party, or as a small appetizer for a dinner party. It is sure to please.
