Sgroppino al limone
This is a variation of a classic Italian frozen cocktail. Unlike most recipes, I add limoncello to give an extra lemon boost. It’s the perfect drink on a summer afternoon, but would also make a great light and refreshing dessert after a heavy meal (especially if it’s an Italian meal).
Chill 4 champagne flutes or wine glasses.
Let 2 cups of lemon sorbet soften at room temperature. The better quality sorbet, the better the drink, so don’t skimp here. When soft enough to mix with a whisk, mix in 1 oz vodka, 2 oz limoncello and 1/3 cup Prosecco or other sparkling wine. Pour into champagne flutes, garnish with lemon zest and enjoy!
