Thai-style halibut and banana curry

I remember first seeing this recipe and thinking it looked good. I came across it again recently, and noticed how quickly it comes together (less than 15 minutes). It will probably take you longer to make the rice than to cook the actual curry.

For such a quick meal, it packs loads of flavour, partly from the curry paste. The banana makes a nice touch, providing just a touch of sweetness as well as creaminess.

The halibut is a splurge, and I’m happy to report the curry does not overpower the flavour of the halibut. It still comes through.

This would make an amazing dinner party meal given how quickly it comes together. Have all the ingredients prepared in advanced, then all it takes is 15 minutes to cook once your guests arrive.
