In the world of food, one of the few good things about winter is that citrus fruit are in season.
I love pound cake and tend to stick to a tried-and-true vanilla pound cake recipe. So it must have been the winter blues that attracted me to this bright orange pound cake. And I’m glad it did.
Pound cakes are super-simple to make. You beat butter with sugar, add eggs, and then alternatively add flour and a liquid.
This recipe uses fresh orange juice as the liquid for the batter, along with orange zest for extra flavour. (You can see the orange zest flecks in the photo below.) To top it all off, once baked, you make an orange glaze with some more orange juice and icing sugar. The result is a very fresh and unmistakable orange flavour infused throughout the cake.
It’s the perfect pick-me-up for a long winter day or a simple but refreshing dessert.
