I love meatballs. I don’t like making them (I get bored after rolling about a dozen). But I love them enough that I continue to make them.
I usually make them with a classic tomato sauce (with or without pasta).
This seemed like an interesting alternative.
Seasoned beef is formed into meatballs, rolled in flour and fried until cooked through.
Then you make a sauce with red curry paste (we all have half a jar in the fridge, right?), garlic, coconut milk, peanut butter, fish sauce and sugar. Add the meatballs and serve!
