Baked cauliflower wings

When COVID-19 quarantine has you craving bar food, you make it healthy with baked cauliflower wings, a healthy vegan alternative to fried chicken wings.

This recipe from The Buddhist Chef is easy to make: mix the batter ingredients together, toss the cauliflower florets into the batter, and bake in a hot oven, flipping once. Serve with a vegan mayo aioli or other favourite dipping sauce.

The original recipe calls for brushing the cauliflower mid-cook with hot sauce, but I find it easier to skip that step and spice up you aioli a bit.

Tip: if you have a large cauliflower, make a 1.5x batch of the batter to ensure you have enough to generously coat all the florets. Also, make sure the batter isn’t too thick, adding a bit more plant milk to thin it down a bit.

Serves 2 as dinner or 4-6 as a snack.
