Vietnamese summer rolls

Usually a snack in Vietnam, summer rolls make a nice lunch or light dinner. And the making process can be made into an activity—just think of them as a fresher and healthier take on tacos. Get all the components ready, and let your guests make their own at the dinner table. The only work you have to do is clean the greens, cook the rice noodles, and prepare a sauce. (Or skip that last step if you have a sweet and spicy sauce hanging around, which is what we did.)
