Spicy southwestern meatloaf with sherry-mushroom gravy

Meatloaf is one of the best comfort foods. I remember having it as a kid, but I’ve never actually made it myself. Maybe because it has a reputation as being not terribly exciting. Enter new takes on meatloaf from Fine Cooking.

They came out with their create-your-own-meatloaf recipe that is great for putting together a meal from pantry scraps. But they also have a handful of recommended variations… I gave their spicy southwestern version a try.

The meatloaf was fantastic for a few reasons. First and foremost, it was delicious. This variation is flavoured with red pepper, cilantro, jalapeño pepper, chile powder, lime zest and cumin.

But meatloaf is also great for other reasons: it’s inexpensive (fillers make the meat go a long way), it’s easy to prepare, and it makes delicious leftovers. Enhance it with a mushroom gravy (especially nice when you re-heat leftovers).

I served it alongside mashed potatoes (doesn’t all comfort food need to be served with mashed potatoes?) and roasted root vegetables (carrots, turnips and parsnips).

Absolutely delicious for a cold winter or spring day… or even a rainy summer day.
